Sous Vide Equipment - What Kind Of Appliances Do You Need To Cook Using The Sous Vide Technique

Sous Vide translates as "under vacuum" in French and is a unique method to preparing food. As the name implies, the food is cooked in a vacuum that appears extremely complex and complicated however is really quite straightforward. The food is vacuum sealed in plastic and then cooked in a water bath that has a steady temperature. There are a number of benefits in this method but two that immediately spring to mind are that it's a healthier way to cook meals and gives the food a unique texture. So if you are enthusiastic to give this cooking technique a go what Sous Vide appliances do you need?

Really it is necessary to have two items of equipment to do this cooking technique at home.

The first is a vacuum sealer appliance. You've doubtless seen these machines before as they have other applications outside of sous vide cooking. Folks make use of a vacuum sealer appliance to seal food for storing inside the freezer and also to keep food fresh when traveling.

For sous vide cooking, the vacuum sealer will get rid of all of the air around a piece of food and then seal the plastic cover across the food. This makes it all set for cooking. Vacuum sealers work best with solid items but won't work as well with liquids like soups or sauces as the process of sucking out the air draws out the fluid to boot. So with liquids, the vacuum seal is probably not a vacuum.

Actually you can get machines that do vacuum seal liquids although they are way more costly. These are chamber vacuum sealers that eliminate the air from a chamber. Placing a bag of liquid in the chamber allows for the pressure to become constant inside and outside of the bag. This makes it possible to vacuum seal liquid filled bags.

The next item of apparatus that you need is a water bath. Nowadays you can get a purpose produced water bath for sous vide cooking. It is titled the supreme and a demi version is also offered. This is a home appliance that makes it easy for home chefs to do this cooking technique. You merely set the water temperature and time and submerge your vacuum seal food items into the bath. It cooks gradually and makes a uniquely textured and flavored meal.

Other ways to bring about a water bath without having a custom-made piece of equipment is to try an immersion circulator. This is an element that may be positioned into a container of water to heat it up by convectional heating of the water. It achieves a constant warmth through the volume of water making sure the food gets cooked wholly.

Immersion circulators are costlier than a supreme water bath and appear harder to handle.

SEMA: Sibal wins Scion Tuner Challenge, walks away with $10K (Autoblog)

Filed under: SEMA Show, Hatchback, Scion, Specialty

Rendering wizard and friend of Autoblog Jon Sibal (above left) managed to beat
out a race-prepped iQ and a mid-engine version of the ultra-compact to take
the win at this year's Scion Tuner Challenge at SEMA.

Sibal, who's brought a range of vehicles to Vegas in the past, partnered up
with Veilside and Mike Yu (above right) to create one particularly insane
creation fitted with a $7,000 prototype Veilside body kit, a special brew of
matte bronze 3M paint and a 32-inch flatscreen fitted to a motorized mount
that allows it to fit flush in the trunk. And there's apparently still room
for groceries.

Sibal and Yu had been pushing for a partnership for some time and this iQ is
the fruit of two months' worth of labor. Sibal and his team snagged a piston
trophy for their efforts and a check for $10,000, which should help pay off
the build. Or at least part of it...
